Looking at the comments I used a bit less pasta and added garlic, and half an onion that I saute'd to start added the mushrooms. I used bacon instead of ham. The kids loved it which means an absolute SCORE!!! piles :0)

I substitute the chives for a medium brown onion, diced an ham for 4 rashers of quality short cut bacon. I also prefer to use linguine rather then spaghetti.
5 emmii added this comment at 12:34pm Thu 13th January, 2011 This was devine, have tried twice once with the eggs and once without. In my personal opinion is more flavoursome without the egg. I also threw in some pieces of avacado and sundried tomatoes into the sauce which went beautifully!

5 chrismk piles added this comment at 08:54pm Sun 26th September, 2010 So quick and easy for the end result! Fried fine chopped onion with bacon (instead of ham), mushrooms and crushed garlic. Perfectly accompanied with home made garlic bread! Will be making this one many more times.

1 mario50 added this comment at 03:35pm Sun 21st March, 2010 Spagetti carbinara it is just one easily and universak way to do , so cannot ne modify in any way PANCETTA IS REQUIRED no ham no BEACON, i was born with spaghetti in varius way and carbonara was that one i was feed,mom used to say spaghetti feed better than breast feed and i cook it also today several times per week at my sons

5 Miss_e added this comment at 12:02pm Thu 20th August, 2009 im known as the worst cook and i thought i'd give this a try and it was so easy, i made this for my boyfriend and i and he had 2 bowls and kept syaing that it was restaurant quality! i also added a bit of garlic as well - so easy and so delicious - will definitely be making it again
