Cake 50 g> almond powder cocktail 200 g> Granulated sugar 20 g> Honey 270 g> Whole eggs 230 g> 200 g flour 150 W> 82% Butter soft 50 g> Lime juice 1 n> Lime (zest and juice) 5 g> chemical yeast cake 16 g> Green Tea Matcha cocktail 10 g> Warm water
Infuse cocktail the tea leaves with the water warm for a few minutes. Work in planetary leaf with the softened butter, sugar and honey and add a little cocktail at a time, the eggs, then the flour, ground almonds, baking powder for cakes, and finally the lime juice, its peel and tea. Bring to a boil in a saucepan cocktail water and granulated sugar. Add the Matcha tea and leave to infuse. Once cool the syrup, add the lime juice and brandy with lemon. Filtered through a sieve and used with a brush.
